My DH likes the Grilled Caribbean Chicken Salad at Chili's. I found this dressing recipe on one of the copycat recipe sites so he can have it at home.
1/4 cup grey poupon dijon mustard
1/4 cup honey
1 1/2 tsp sugar
1 tablespoon sesame oil
1 1/2 tsp apple cider vinegar
1 1/2 tsp lime juice
Blend all the ingredients with electric mixer and chill.
I thought it was sweet enough with the honey so I didn't put the sugar. The dressing at the restaurant is lighter in color so if you don't like too much mustard you could substitute some mayonnaise. The salad has pineapple chunks and mandairan orange slices. We were having it with steak so I put some Feta cheese instead of the chicken. At Chili's they also put Pico De Gallo but I didn't have all that.
