Hey ladies,

I did a search for a meatloaf recipe and drew a blank. Please take your best shot and submit your favorite meatloaf recipe. Thanks and take care. Have a super year and happy rving to all!!!

1 # hamburger

1 finely diced onion

1 small diced bell pepper (optional)

salt, pepper and garlic powder, to taste. 1 Tsp Chili Powder

2 slices bread, run under water faucet and squeeze out excess.

2 eggs

1 can Rotel tomatoes with Green Chilies

Mix all well, cover and bake at 350*.. for about an hour. Put Ketchup on top and spread out evenly. Bake about ten minutes longer.

A special addition is put one layer of meatloaf mix in the bottom of baking dish.

Add layer of washed and sliced into rounds potatoes... Don't peel.

Add rest of meatloaf mix in pan...Bake as above.... top with ketchup...Serve with salad of your choice...you have meat, taters and salad...Well balanced meal!

The meatloaf I make is pretty basic and no amounts so not sure how helpful it will be since it's just me and the husband and it's not his favorite meal once in awhile though I just gotta do it so been trying to cut done on the amount

guessing to the amounts

Chop up a onion depending upon how much you like it would tell you how much put in bowl add a egg and maybe a 1 cup of oatmeal mix add 1 pound of hamburger mix in put into a loaf pan put ketsup on top leave off if you don't like ketsup depending upon who I'm feeding determines if that gets put on.

I understand that putting bacon on top helps it be moisture....but never have a problem with it being dry

I use one package of dry onion soup mix, like Lipton's to1 lb meat, one egg, one small can tomato sauce and a handful of bread crumbs. My mom used saltines crackers, smushed up with a rolling pin and I have used oatmeal, but I life the bread crumbs best now. I love meatloaf but neither of my boys likes it nor did their dad. Now make two or three small ones and freeze them. The onion soup is high in sodium & that is a problem or some folks, but you really don't need any other seasoning with it.
