Lemon Summer Pie This is really EASY! Makes 2 pies.
1 can sweetened condensed Eagle Brand milk
1 c. lemon juice (I've always just used bottled)
1 big Cool Whip (this says 18 1/2 oz--don't know if they are only 16 oz now)
2 graham crusts
Make sure first 3 ingredients are refridgerated for a few hours!
Fold together first 3 ingredients. I add a drop of yellow food coloring, and sometimes a little lemon zest if I have a fresh lemon. Divide between the two crusts. I add extra Cool Whip to the top if I have it...and sometimes slices of fresh lemon slices for pretty. This sets up immediately if everything is cold to begin with, and will slice and serve out of the pan right away! Maybe sprinkle on some berries
