Next month my sister is coming to visit and we are going to camp in the Laguna mountains. I need some recipes for simple, easy to cook, food for dinner. Didn't see any NO fires allowed signs when I was up there on Sunday but I expect there to be by then. So...I have a gas grill and a stove to cook on. Also if anyone has any ideas on making ice last longer in a cooler?  oh btw, she is diabetic...

I know this sounds crazy, but it really works as a great insulator (inside a regular cooler)....bubble wrap!

As for a good quick dinner, tonight I sauted some sweet bells pepper and red onion, boiled whole wheat pasta and  used a bottled pesto sauce.  It was yummy!

never would have thought about bubble wrap!!!

ok don't forget the age old tin foil dinners.  fun thing and fish is so easy on your grill

Me either, Sheila...but now I am thinking it would be good...puts air pockets in there! And yes the tin foil dinners are a definate one. and s'mores of course...i might even have to find some of Sharon's giant marshmallows!

Alice, my sister and her husband camp with ice chests and they always cover them with a thick layer of blankets.  It really does insulate from the heat and holds in the cold.  Also I always have to fix potatoes, onions, sometimes carrots and garlic in foil.  I like to add some fresh rosemary also with butter.  I have also found that using the foil with the no stick coating works the best.

We are not fans of sandwiches, but when we camp I
want the cooking to be simple as possible. No hovering
over a hot cook stove! 
 
Retread Rollups
 
Retread is people of age 40+ motorcycle organization. 
This recipe was one of those members favorite.
Mix diced onion, diced bell pepper, 1# hamburger,
Salt, pepper and garlic powder together.  Put in zip lok
bag and freeze.  Thaw on camping trip and throw in skillet
and cook till done.  Use a second skillet to "brown" flour
Tortillas... Wrap  meat in tortillas and eat.  Yummy!
 
Prison tacos
 
Frito's
1 lb ground turkey. chicken or beef 
1 pkg taco seasoning
1 16oz can tomato cubes(tomato paste,chopped etc)
1 lg yellow onion (small diced)
1 pkg taco seasoning
1 16 oz can (drained) kidney beans
1 pkg shredded cheese(Colby,American etc)

Brown meat, drain. add everything else into
meat except cheese and Frito's, and combine for 4-5
minutes, spoon over Frito's 
 
Southwest Chicken Wrap
 
chicken breast (diced)
salt, pepper, onion and garlic powder to taste
sprinkle on some taco seasoning
(this can be pre-mixed and frozen for ease of use)
Cook in skillet... spoon onto flour tortilla,
spoon on Salsa.
roll and eat.
 
Sausage Wrap
 
Cook sausage link  cut in 3-4" pieces till done
Wrap in a slice of bread with mustard on it
This is simple and good for either breakfast
lunch or supper.  Can add slice cheese.  We love this!
 
These last three are good as feature canned meats not needing
refrigeration
 
Frito Pot Pie
 
1 can chili
diced onion
Fritos
Shredded cheese
 
Place chili in skillet... simmer with
   diced onions till onions are done.
Place Frito's on plate, spoon over chili mix
Sprinkle with shredded cheese..and fresh
     diced onions if you like
 
Spam Hobo Supper.
 
Diced spam
butter OR Pam spray
sliced potato
sliced onion
diced carrot
corn
any veggies of your choice
Seasonings of choice
Can be made with chicken breast
or hamburger.
 
Wrap all in foil and cook over fire or stove.
 
Tuna Ramen Surprise
 
1 package of Chunk Light Tuna (prepackaged) OR
1 can of Chunk Light Tuna drained
2 packages of Ramen, flavor of choice
3/4 cup graded sharp cheddar cheese
Water, depends on how much you want

Boil water in cooking pot
Add Ramen noodles and allow to cook for 3 minutes
Add Chunk Light Tuna package to Ramen and stir
Add shredded sharp cheddar cheese and stir
You did it!

I try to premix my meats and spices and then freeze in ziplock bags. 

helps fresh meats to last and helps not to have to haul so many spices and supplies too.

You and your sister will SO enjoy camping and each other!!

Thanks for the ideas...we ARE going to have great fun! 4 weeks, 5 days from now!!...not that we are counting or anything!
