Gypsy, hope you have fun on your future job. Sounds like a beautiful location.
I can only tell you about my experience with a generator in a Class B.
When I drive, my one house battery gets charged. At night when I stop at a Wal-Mart I turn on my inverter (1000W - $100 I think) and plug the TV and/or DVD player into the 12Volt socket and the inverter. I can watch TV for several hours and my lights work fine too, all running off the battery.
When it has been cold, I turn the furnace on (propane) and it (fan) runs off the house battery as well. I have never run out of battery power for those late night stops.
If I want to run my microwave or air conditioner, I push the generator button and start it up (propane). I also turn the generator on when I want to plug in the blow dryer.
I have an on and off switch for my house battery. I keep it shut off all the time until I need to use it.
I have never tried using a crock pot off the battery/inverter. It might work, but your battery may not last that long. Is there possibly an electric plug available somewhere close by - bath house, storage building, etc.? Maybe you could carry the crock pot to the electric plug?
Trust me, this stuff isn't difficult. It just takes practice to figure out how it all works and then it is easy.
Regarding your generator, yes, you definitely need to check it out because the worst thing you can do for a generator is not use it. It is good to run it under a load (air conditioner) at least once a month for at least 20 minutes. When I bought my Class B the previous owner said she rarely used the generator. DH checked it (oil, added propane) and I've never had a problem with it.
Oh, that's a lie, I did have a problem with the generator last year. It kept shutting off for no apparent reason and the repair shop couldn't figure it out. Finally DH figured it out - my 5 lb. Chihuahua was bumping into the on/off button when I wasn't around and was shutting it down. We fixed the button where it won't switch off when she bumps into it - problem solved.

Hey, Gypsy...when this wonder man shows you all the bells and whistles, be sure and take notes or maybe even record it. He is no doubt a wealth of knowledge and you simply cannot assimilate and retain all the information he can give you!
I'm so glad you found a man known to be reasonable, honest and helpful. This is a good thing.

We used to have a 26' Fleetwood Flair. I'd have the generator going and the crockpot cooking while I was driving down the freeway so the food would be ready when we stopped. I've heard now that's a great way to set you RV on FIRE! Does anyone know if that's true or not?

I don't know for sure, but I'm going to vote untrue!  People do this all the time.  This is also a wonderful time to use that little power inverter to power the Crockpot.  You are running down the highway and battery being charged by the motor... and inverter changes battery 12v power to electric power needed for the Crockpot.  Many do this and set the Crockpot in the sink, so it doesn't  slide around on the countertop.   Good odors from the cooking permeate the RV..and make one anxious to be stopping for the night and that good cook-as-you-go  meal.   Ahhhhh!  isn't RV traveling mah-vel-ous!!???

I ended up cracking my ceramic crock so I bought a Fagor 3-in-one-cooker. It is wonderful! I love it and use it so much. It's a pressure cooker, plus slow cooker! I can throw meat and stuff in the pot - pop it on pressure for an hour and it switches to slow cook and that meat is so tender it's like its falling off the bone. That pot makes me a much better cook than I actually am.

It isn't ceramic either so it can take more torture when traveling.
