Sourdough Scones
Sourdough starter: 2 C. flour 1 pkg. dry yeast less than 2 C. warm water mix this all together and let sit at room temp over night or atleast 6-8 hours. This will get bubbly Scones: sourdough start 2 tsp. baking powder 1 tsp. salt 1 tsp. sugar mix together and add enough flour to make a not too stiff dough deep fry When I do this for Navohj Taco's I roll out to make them larger. If just making scones like for breakfast I pinch them off and shape really good with honey butter, butter and jelly cinnamon sugar I love this honey butter although with the fears of whatever might be in that raw egg don't make it very often Honey Butter 11/2 C. honey 1 egg yolk 1 C. real butter beat for 10 minutes with a mixer will not separate. Sheila, do you use the entire amount of sourdough starter? I have to agree about the egg yolk...I'd be a little worried since it was raw even though it was whipped with other ingredients. Wow, Sheila...would never guess that these were sourdough as they did not have the 'sour' taste that most have! I loved them!! Alice

Yes Donna this recipe you use the whole start and start again the next time you go to make them It calls just for the egg yolk and egg beater is the whole egg I think but if you can find the just egg I'd go for it. You don't taste the egg at all but think that is why it doesn't seperate. Also think mind you just think that the heat of beating it that long helps. Sorry don't think I'm much help sheila

The egg yolk is what thickens the honey butter. It will not harm you, mayonnaise is made from egg yolks and oil. Just be sure to refrigerate any left overs. A Friend is one who strengthens you with prayers, blesses you with love, and encourages you with hope. Liz

Honey is a natural preservative. Of course it needs to be refrigerated but the honey would retard any rapid bacteria growth. dpf
