Baked Potato Soup



4 Large Baking potatoes ----------------4 chopped green onions
2/3 c. margarine &-----------------------12 pieces bacon,cooked & crumbled
2/3 c. flour --------------------------------1 1/4 cup shredded cheese
6 – 7 c. milk ------------------------------1 1/4 c. shredded cheddar cheese 1/4 tsp salt 8 oz sour cream-------------1\2 tsp. pepper





Wash potatoes and bake 1 hour at 400 degrees. Let Cool. Cut and scoop out pulp. Discard skins. In a large pot, melt margarine and add flour; stir until smooth. Cook 1 minute stirring constantly. Gradually add milk and cook over medium heat, stirring constantly until thick and bubbly. Add potatoes, salt, pepper, ½ the onions, bacon and 1 cup cheese. Stir in sour cream. Add more milk, if needed, until mixture reaches serving consistency. Serve in bowls and top with remaining bacon and cheese. Use extra onion as garnish. Makes 8 – 10 servings.
