DREAM POTATOES
5 pounds of potatoes, peeled cooked and mashed with some potato water (russets work best) 3 average size potatoes equal about 1 pound
To the hot mashed potatoes beat in until smooth and creamy:
8 ounces of softened cream cheese (low fat or no fat is fine) 1 cup sour cream (low fat or no-fat is fine) 1 teaspoon salt ¼ teaspoon white pepper (black will work) 2 tablespoons softened butter or margarine Generous dash of garlic powder (optional)
Place in a casserole. These potatoes can be refrigerated up to 2 weeks or freeze them and use in 2-3 months. Bake at 350 or microwave until heated through. I use these for holidays. I can make them ahead of time and I don’t have to mess around with making mashed potatoes just before the meal is served. I freeze them in containers that will serve for the two of us because I hate to mess around making mashed potatoes for two people.

Pat? Is item one on this list creamed cheese? I think I have made these...:) They are great!!

This sounds heavenly and I like the idea of putting them in containers for two and freezing them. I like REAL mashed potatoes not the box kind. I think my sister made this recipe and it was so good!

You betja! Stop by...I'll hide a 5 gallon pail of potatoes in your vehicle! ;p By the time we use up all these damn potatoes I'll be able to write a cookbook on 365 ways to cook 'em. dpf

Thanks for the recipe, very similar to my Sister's recipe but different will make it up for Thanksgiving.
