I was sure I got this recipe from Barbzeee - so figured it was posted before, but it's not - so here goes:
one really simple recipe LOL
Pepperoncini Beef
1 (3 pound) beef chuck roast 4 cloves garlic, sliced 1 (16 ounce) jar pepperoncini
Make small cuts in roast, and insert garlic slices in cuts. Place roast in the slow cooker, and pour the entire contents of the jar of pepperoncini, including liquid, over meat. Cover, and cook on Low for 6 to 8 hours.
put the meat on hoagy rolls w/provolone cheese and toast it in the broiler for a few min. until cheese melts.

Me, who loves garlic, don't always put the garlic in - and I cut the meat into chunks - then let it cook until the meat is falling apart. Unlike the recipe above, I eat the meat the first time with potatoes and a salad - And I've substitued hot banana peppers sometimes with their juice. It's so simple and so versatile, can be the main dish or made into sandwiches. --------------------------- Once your reputation is ruined, you can live life quite freely :) (old German saying)

Beth, forgot to post and let you know I made this a couple of weeks ago...cut the meat in chunks and had it the first nite in a hoagie roll with provolone cheese and roasted red peppers in olive oil and garlic. Boy, was that good! Took the leftovers with me on the jeeping trip and made bean and beef burritos..BF loved it too! That meat was so tender and had such great flavor...this is definitely a keeper! Sharon, I'm glad you liked it.. I had sent that recipe to Beth as I knew she likes a great Italian dish.. I always make that for my brothers..we sit here and devour it.. Gots to have them peppers..LOL
And yes, it's one that many of my friends write me and tell me how they are still making it...
