I always used my own spices, etc to make these - then decided to try them with McCormick's "Cracked Peppercorn Herb" rub - I know they say it's for meats - but it worked great. (And finding these short cuts helps tremendously in the rv). If you use large potatoes, you can get about 3 servings per 2 potatoes.
4 large baking potatoes. 4 tablespoons extra virgin (good) olive oil 3-4 teaspoons McCormick Cracked Peppercorn Herb Rub (this will have some kick)
Preheat the oven to 400 degrees.
Cut the potatoes in 1/2 lengthwise. Cut the 1/2's in 1/2 - and once again. (8 wedges per potato).
Mix the olive oil and herb rub together. Toss the potatoes in the mix, making sure to get olive oil on all surfaces of the potato.
Spread the potatoes on a baking sheet with one of the cut sides down. Bake for 20 minutes, then turn the potatoes onto the other cut side. Bake another 15 to 20 minutes.

I've also used this rub on a pork roast and on pork chops - very tasty. Smiling is contagious - try it!
