This is from The Golden Door Spa. it is sooo good!
1 8oz can crushed Pineapple, drained 1/3 cup Chinese Plum Sauce 1 Tbs Sugar 1 tsp. Rice Wine Vinegar 1/2 tsp. Red Pepper Flakes 1 tsp. Sesame Oil 2 cups cooked Duck or Chicken in bite size pieces 1/2 cup chopped Green Onions 1 small Cucumber, peeled and chopped 2 Plums, or 2 - 3 Tbs.Blueberries 2 Tbs. Toasted Sesame Seeds Crisp large Leaf Lettuce
In a saucepan over medium heat blend together Pineapple, Plum Sauce, Sugar, Vinegar, Red Pepper and Sesame Oil. Stir occasionally for 5 minutes. Add meat and Green Onions, stir until well mixed and heated through. Remove from heat, add Cucumber and Sesame Seeds. Stir to blend. Wrap in Lettuce Leaves like a Tortilla.

Sparkle, that looks GOOD! This is MY kind of recipe and is the type foods I eat. I learned to wrap foods in lettuce leaves from the Vietnamese gals who run a BBQ place in the neighboring town. They cook BBQ burgers and steaks for us, and they eat grilled meats, rice, vegies and other things wrapped in those lettuce leaves..Friend, Joy and I decided we are going to ask them to cook us what they are having next time we go..Looks good!!
I liked the Tomato and Shrimp Farcies too.
