First let me say .. I did my baked potatoes over night in my crock pot.. made it easy.. you can also microwave too.. what ever is easy :) This was the easiest one I've made I have several.. but this just made it simple.. God Bless and Enjoy
Crock Pot and Stove Top BAked Potato Soup :)
1/4 cup chopped onion 1 (10 3/4 ounce) can Cream of Mushroom Soup Healthy Request 1 can Carnation Evaporated Skim Milk 2 full cups (12 ounces) diced, unpeeled baked russet potatoes 1/4 cup Crumbled Bacon 3/4 cup (3 ounces) shredded Kraft rf Cheddar cheese reduced fat 1/4 cup chopped green onion
* Changes I did below I doubled the recipe.. also used half Cheddar and half Smoked Gouda cheese.. I did this in the crock pot.. I did saute the onions first and mixed the soups and milk together and put the potatoes and bacon in too. Crock Pot.. On low for 3 hours and put on high when adding the cheeses..and make sure you stir >>>> My Crock pot on low cooks hotter.. so this you will have to judge.. I served this with Sour Cream on the side with some chopped green onions too... this was excellent..


Stove Top
In a large saucepan sprayed with butter-flavored cooking spray, saute onion for 5 minutes or until tender. Add mushroom soup, evaporated skim milk, potatoes, and bacon bits. Mix well to combine. Lower heat and simmer for 10 minutes, stirring occasionally. Stir in Cheddar cheese and green onion. Continue simmering for 5 minutes or until cheese melts, stirring often. Life is full of surprises, just go with the flow !

Note: When you go to reheat this soup.. you need to add more milk as this does get thick and boy this is rich and delicious... Please do let me know if you make it .. if you make any changes as I do add all that to my recipes too..

To make Baked Potatoes in a Crock Pot do I do anything to the potatoes? Or just chuck them in and switch to Hot? 1984 Class A Allegro Bogie the Pit (rescued) ....and this too shall pass.

Sparkle.. LOL Wash them first.. then I poke them with a fork.. and if you like you can butter them lightly or spray..what ever.. then I use the Aluminum Foil Wraps..wrap them up.. put them in the Crock Pot and you can do either way.. Set on High or on Low.. I'll post one sec.. .. or you can microwave too.. what's ever easy for you.. I usually do mine night before..or if I'm making Rotisserie chicken I put them in with that and cooks all together..

Crock Pot Baked Potatoes !
Wash Baking Potatoes.. Prick with Fork You can use butter spray on skin Wrap in Foil (thin foil) Fill crock pot with potatoes.
Cover and cook on low 8 to 10 hours. or
(High 2 1/4 to 4.) Do not add water. Life is full of surprises, just go with the flow !
