Here's a chicken recipe that I make and freeze before I leave if I'm going to be boondocking. It's kinda involved, but worth it.
Chicken thighs or breasts, skinless, boneless if you can get it.(I prefer thighs, not as dry)
Jar of salsa, I like the roasted garlic
Put chicken in crockpot, pour salsa over top, cook 'til done, about 4 hours. I use about 1 cup of salsa to 6 thighs. Remove meat from pot, shred, moisten meat with small amount of liquid from pot,or more salsa, add canned green chili's if desired.
You can use the chicken for tacos,taco salad, burritos, grilled chix sandwiches or whatever you want. I have even been known to throw some in a frying pan, add beaten eggs and cheese and make a breakfast burrito. It freezes really well. I freeze it in foodsaver bags, just drop the bag in boiling water, and no pan to cleanup. Heat some re-fried beans in the micro, tortilla on the stove burner, and dinner's ready!
