This is a recipe that can be prepared at home, and as many units taken with you as you want. It can also be tinkered with to your taste, i.e. mushrooms added. If you are a one egg person, then divide the mix into 12 portions. If a two egger, then 6 portions. Okay, are we sitting comfortably? Then lets begin!
1/2lb Sausage meat (I used Turkey Sausage.)
2 Potatoes
1 Green Bell pepper
1/2 cup chopped Onions
2 cups shredded Pepper Jack cheese
1 small can chopped Green Chilies
Brown sausage meat in skillet, drain and set aside. Peel and grate potatoes on large hole grater. Put potatoes, green pepper and onion in skillet and cook until the potatoes brown. Add the grated cheese, chilies and the sausage. Stir until melted. Divide into either 6 or 12 portions. Put each one in a freezer bag and freeze.
Later, defrost 1 portion of sausage mix. Beat either 1 or 2 eggs and pour into a buttered skillet. Dump in the sausage mix and stir until eggs are cooked. Warm a tortilla and roll up egg mixture. Yum!

That sounds good Sparkle! I do a lot of boondocking in the winter, and that would be good for a quick dinner, too. Thanks!

Aw Shucks! You guys are being so nice about this I have to confess I didn't invent the recipe. It comes from a really neat book called, wait for it..."The Sweet Potato Queen's Big Ass Cookbook (and financial planner)" by Jill Conner Browne. It's written as a Biography type, with the recipes just scattered through and some of them sound great.

Sparkle that does sound really good too.. just when I'm hungry :) I just copied it.. and you know the name of that book..hahaha.. I love it already.. gonna have to see if I can find it.. I bet it's a great book to read while setting a spell..
