Told Joella that I'd read this recipe it sounds good though haven't tried it. Might be something to try in the days of two many zucchini's It was in a women's World magzine in a article on using Chipotle products
Postion broiler rack so that 1 qt. baking dish is 4 inches from heat source Preheat broiler. In non stick skillet heat 1 T. oil over medium-high heat. Add 1 small onion, chopped, 1 clove garlic, minced, 1/2 tsp. oregano, 1/2 tsp. salt, 1/4 tsp. Chipotle pepper; Cook until soften about 2 mins. Add 11/2 lbs. zucchini thinly sliced. Cook until tender about 10 mins. Add 1/4 C. white wine; cook until wine is evaporated. Transfer to a non-greased baking dish top with Cheese broil a couple of mins until cheese is melted. If I was to make this would subsitute something for the wine as we don't use wine.
Sounds good will have to remember this when the time comes
