Told Joella that I'd read this recipe it sounds good though haven't tried it. Might be something to try in the days of two many zucchini's It was in a women's World magzine in a article on using Chipotle products

Postion broiler rack so that 1 qt. baking dish is 4 inches from heat source Preheat broiler. In non stick skillet heat 1 T. oil over medium-high heat. Add 1 small onion, chopped, 1 clove garlic, minced, 1/2 tsp. oregano, 1/2 tsp. salt, 1/4 tsp. Chipotle pepper; Cook until soften about 2 mins. Add 11/2 lbs. zucchini thinly sliced. Cook until tender about 10 mins. Add 1/4 C. white wine; cook until wine is evaporated. Transfer to a non-greased baking dish top with Cheese broil a couple of mins until cheese is melted. If I was to make this would subsitute something for the wine as we don't use wine.

Sounds good will have to remember this when the time comes

We have one of the electric griddles that we use a lot. I like to take zucchini and yellow squash and cook it on the griddle. I slice it long ways about 1/4 inch thick, put salt and pepper, spray the griddle with pam and cook squash until it's browned on both sides. Almost as good as frying it and a lot better for you. You could probably cook sliced onions like that too but we don't eat onions that much.

Those sound good and will try them both.. I threw together a zucchini bake three days ago... In a mixing bowl, put diced zucchini, diced onion, salt and pepper, garlic powder then mixed up about 1/2 cup Bisquick Mix with milk and egg and added that to the mixture... Sprayed a baking dish, added the mixture and baked 1 1/2 hours at 350*... Thought about topping with shredded cheese--- but decided against the added calories... For those of you who can---- go for it... I enjoyed it.
