Cranberry Cream Salad (or Dessert)
Wash and grind 2 cups raw cranberries. Put in a colander over a bowl to drain.
Add 1 small can drained crushed pineapple.
Add 2 cups miniature marshmallows, and
½ cup sugar.
Mix and chill overnight. I cover it and put the colander and bowl in refrigerator.
Before serving (I’ve done this up to 4 hours before).
Fold in 1 cup of whipping cream – stiffly whipped, with no sugar added.
Sprinkle ¼ cup chopped pecans on top.
We usually double or triple this recipe for Thanksgiving gatherings.
