North African Spiced Carrots

1 T. extra virgin olive oil

4 cloves garlic, minced

2 tsp. papricka

1 tsp. cumin

1 tsp. coriander

3 C. sliced carrots

1 C. water

3 T. lemon juice

1/8 tsp. salt or to taste

1/4 C. parsley, chopped

heat oil add garlic, papricka, cumin, coriander, cook stirring until fragrant but not browned

about 20 seconds... add Carrots , water, lemon juice and salt. Bring to simmer, stirring often cook

until tender and syrupy...add chopped parsley.

made this for a church supper and was really good although I didn't cook them long enough never got syrupy...but tasted good and not a hot spicy I didn't even think they were that spicy
