I baked pork loins in the Crockpot....and wished to add sweet potatoes in the Crockpot too. I didn't want them to cook IN the meat juices, so devised this to keep them dry. I placed the lid from a 2 qt. baking dish upside down in the crockpot, wrapped the taters in foil and placed them atop the lid.

Cover and cook all day on low.

This is the first time I've added the lid and sweet potatoes...but I have added foil wrapped regular potatoes to other meats in the Crockpot and they cook very well.

Sharon, that is thick sliced onion, topping the meat.

I had the recipe here too, but removed it. I've used it for years, is our son's original and is SO good. I have always cooked it in a skillet, atop the stove. It did not adapt to Crockpot cooking well. Water cooks out of the meat and onions too slowly to dissipate, an amazing amount of liquid, and waters down the meat--- making it bland tasting. Milt liked it and bragged on it, ( perhaps he's a very wise man)..but I thought it was awful.

Ya win some ---- lose some!!

But, the potato still cooked well. You could add other veggies in that lid top too.

Oh yeah, once you stated that it was onions I could see them......4000 dollars for eye surgery and I still can't see! LOL! Looks like a really good idea for the potatoes, gonna have to try that. So how do you make that recipe in the skillet? BF likes pork, but he can't eat anything dry, gets stuck in his craw. He's got scar tissue in his throat from acid reflux. I keep telling him to go to the Dr. and get a roto-rooter job, but he's stubborn about going to the doc.

Sharon, here's the recipe I spoke of.

Pork Loins
Salt, pepper and garlic powder, to taste
thin sliced onion and bell pepper
1/2 cup sliced mushrooms
2 T cooking oil (I use Canola)
Pour on some sweet cooking sherry.... or I use Mexico's cheap knock-off of Kahlua. The latest I used was called Sabrosa Coffee Flavored Liquore.
Sprinkle seasonings on the meat, and place in warmed skillet with cooking oil. Cover and cook slowly to cook all the way through, turning often.
When meat is about 3/4 done...add the onion, bell pepper, mushrooms and liquor. Cover again and continue cooking slowly until meat is done..
