My niece sent me an e-mail recipe exchange. I sent my recipe out, and the copies of the exchange to friends I was supposed to. My returns have brought me some stupendous sounding recipes. MOST are sweets. Here's one.
Earthquake Cake
1 cup pecans, chopped
1 cup coconut
1 German chocolate cake mix
1 (8 ounce) package cream cheese, softened
1 pound confectioner's sugar
Grease 8X13 oblong pan with shortening. Mix and spread pecans and coconut even on bottom of pan. Mix cake according to package. Pour mix over pecans and coconut. Mix powdered sugar and cream cheese together. Spread over cake mix. Bake at 350 degrees for 35-40 minutes. NOTE: When you mix cream cheese and powdered sugar, place cream cheese in microwave and warm to soften. Then add sugar, mix, and drizzle over cake mix.
