I cooked before and loved it but divorce, graduate school, long hours and now hotel living it's just not been an appealing option.
My question is how do you manage to cook for just one or do you? I end up with leftovers for a week or more.

If you google.. or whichever search engine you prefer...you can find a lot of sites with recipes for one or two. Plus any recipe can be cut down for fewer servings. Taste of Home also has a site for cooking for two which i like to look at! Alice

My meals are very simple...but healthy and love them. I grill, bake or " skillet fry" meat with just enough Canola Oil to coat the pan, ..and have a big salad with it. Sometimes vegetable salad...sometimes lettuce and fruits. I don't eat starches much..but if I want a potato..I scrub wash a small potato...slice into rounds, spray with butter Pam, sprinkle with salt and pepper, and microwave for 5 minutes. I cook zucchini or yellow squash the same way. I also rely on frozen mixed veggies and the microwave. Zap a helping of frozen corn.
Sometimes I cook a roast..and divide the cooked meat into small freezer bags. I bake cake in a 9X13 pan, cut into squares, freeze on a cookie sheet and then bag all in a gallon freezer bag. Get one out when needed and zap in microwave 30 seconds.
My breakfast is a pre-cooked frozen pork sausage patty, 2 eggs in a microwave egg cooker... zap in microwave 1.5 minutes while dry toast is in the toaster. OR a bowl of shredded wheat with sliced banana....or raisins in it.
I don't wish to cook lunch and supper. I like the rare sandwich, but don't' wish them daily, so make a chicken or beef stew, freeze in small containers and microwave a bowl full for lunch. OR do the same with bean soups. I make cornbread in a 9X13 pan and freeze it as I do cake, and zap one to go with my soup or beans.
I am cooking this way for Milt and I.... but I can't see that routine would stop if either of us were alone.
Walmart makes fine chicken breast tenders.. eat that and a salad. Ditto for their Rotisseried chicken!!

I have to cook just for myself, too, and it does get old. As it turns out I genterally will make something that will last a few days. Example; I crockpot a lean pork loin roast or a Foster's turkey breast, and slice it for sandwiches, or cut some of it up and put in soup I make out of a can of chicken stock, can of crushed tomatoes (I like the one with jalepenos), can of small white beans and/or rice. Or I put some baby back ribs in the oven and eat that with a salad for a few days. I make chili with ground turkey breast and will freeze some in small pkgs for later. I also like meals that are just roasted veggies. I toss them with some olive oil and Montreal Chicken seasoning. YUM! As for breakfast, I recently changed from eating my usual Cheerios w/banana to making my own homemade granola. I mix like 1/4 C with some light vanilla yogurt and sliced banana.

Well, I'm in good company then! Most ideas, except for batch cooking/freezing, can't really carry that to the hotel! Cooking is limited at the hotel, cause I of course want MY cookware/spices etc., not feasable to pack or rebuy each place!!!
I do love the Taste of Home magazine!!! That whole line from the publisher is great.
