Tamale Pie (can also be baked at 350 degrees for 30-40 minutes)
3/4 cup yellow cornmeal 1 cup beef broth 1 lb. extra-lean ground beef (or turkey or chicken or soy crumbles) 1 tsp. chili powder 1/2 tsp. ground cumin 1 (14 to 16 oz.) jar thick and chunky salsa 1 (16 oz.) can whole-kernel corn, drained 1/4 cup sliced ripe olives (optional) 2 oz. Cheddar cheese, shredded (1/2 cup) FF Sour cream
In a large bowl, mix cornmeal and broth; let stand 5 min. Stir in beef, chili powder, cumin, salsa, corn and olives. Pour into a 3 1/2 qt. slow cooker. Cover and cook on LOW 5 to 7 hrs. or until set. Sprinkle cheese over top; cover and cook another 5 min. or until cheese melts. Serve with FF sour cream.
***Note I have not made this..just got this sent to me..sooo in saying so.. This is on my to Try listing.. but for those that do.. please let me know how you liked it and any changes you did..

Got good friends coming for supper and I've got this in the crockpot. Only change: added a small can of minced green chilis!
To cool supper down a bit I'm going to serve it with a salad a friend just recommended: shredded iceberg lettuce, a couple of chopped crisp red apples, dressed with a nice raspberry vinaigrette.
and....ice cream cones for dessert!

OMIGOD! IT WAS FANTABULOUS! Everyone raved and raved about the Tamale Pie!!!!! DO make it! My friend left with the recipe in hand and we both plan to have a Hot Tamale Pie Supper at our winter campground!
DO serve the cool salad because, using medium hot salsa and the chopped canned chilis made it nice and spicy, but not overly hot.
DON'T MISS THIS EASY DISH!

MaryEllen, I'm so happy you liked it... I have many more for you dear.. am just having the Stuffed Peppers tonight.. told DH.. oh I'm tired.. worked all day..but eeeeeeew I'm fibbing..(white lie)LOL.. He knows me by now.. If there is a way for me to fix something that tastes like I've been over the stove ..why not !!!!...
