This is from The Golden Door Spa. it is sooo good!
1 8oz can crushed Pineapple, drained
1/3 cup Chinese Plum Sauce
1 Tbs Sugar
1 tsp. Rice Wine Vinegar
1/2 tsp. Red Pepper Flakes
1 tsp. Sesame Oil
2 cups cooked Duck or Chicken in bite size pieces
1/2 cup chopped Green Onions
1 small Cucumber, peeled and chopped
2 Plums, or 2 - 3 Tbs.Blueberries
2 Tbs. Toasted Sesame Seeds
Crisp large Leaf Lettuce
In a saucepan over medium heat blend together Pineapple, Plum Sauce, Sugar, Vinegar, Red Pepper and Sesame Oil. Stir occasionally for 5 minutes. Add meat and Green Onions, stir until well mixed and heated through. Remove from heat, add Cucumber and Sesame Seeds. Stir to blend. Wrap in Lettuce Leaves like a Tortilla.
