Was reading some of the old recipe posts and saw someone mentioned preferring fried cornbread over baked. How do you make fried cornbread? Is this like making a pancake? Sounds wonderful, but I have always just had baked cornbread (which I happen to be very fond of). Any directions would be appreciated.

Hi Paulette, it was me. You just add a little more milk, and I use margerine to fry it in. Use a skillet or flat pan. Tastes almost the same as baked, but reheats better for breakfast the next morning. Here's the recipe I use for either fried or baked.
1 c. cornmeal 2 tbs. flour 1/2 tbs. baking powder 1/2 tsp salt 1/2 tbs. sugar (or a little more if you like it sweeter 1 egg 1/4 c oil 1 c milk
Mix dry ingredients, add wet and beat with a spoon til well mixed. Bake 425 or fry in margarine. This recipe is a little wetter than most, so you don't need to add extra milk to fry. This is another one of my grandma's recipes.
