Crock Pot Chicken Fiesta.
4 Boneless Skinless Chicken Breast Halves 1 Jar Pace Medium Picante Sauce 20 Oz. Jar 1/2 cup chopped peppers 1/2 cup chopped onions 1/2 cup chopped black olived.. (add at the end with rice) 1 Cup Frozen Corn 1 Can Black Beans, rinsed and drained 2 Cloves Garlic -- minced 1/2 Cup Minute Rice, Long Grain White
Spray crockpot with nonstick cooking spray. Place chicken breasts in crockpot. Add remaining ingredients, except rice. Cook on high for about 4-6 hours or till Chicken is done... When done, shred chicken and return to pot; stir in minute rice and olives. Cook another 30-60 minutes or until rice is tender. Serve in tortillas for burritos (with lettuce, fat free sour cream, cheese, etc) or makes a great chicken taco salad!!
This is really tasty.. and for those loving mexican foods this really hits the spot .. I make home made tortillas..but when in a pinch I buy good brand.. Life is full of surprises, just go with the flow !

Kerry, that is a good dish too.. I know .. it's one of my favorites.. I love Mexican food of any kind LOL in fact I just love food.. hence.. what diet ???? LOL
I'm so pleased your family enjoyed it.. and you became the Star...see the kids will get to saying "What's next " LOL I'm so happy for you..and it was healthy too by the way :)

Barbzeee, do you make corn or flour tortillas? I just bought a bag of flour to make the special flour tortillas. Love any kind of Mexican food! Seeya down the road, Jenny

Jenny, I do both .. but to make the flour ones.. I learned from a room mate in college.. used self rising flour, crisco and warm water.. If you like I'll post the recipe I use.. just let me know.. You can also use Mesa flour as well.. but they are simple to make and so good.. if you are in a good area like AZ and NM..boy you can get some really good ones too...:) God Bless and hope you enjoy the dinner !

Barbzeee, the flour I bought isn't self rising but that is ok, the recipe is on the side of the bag. I bought a tortilla press so they get pretty flat and I have a lrg wok that I can cook them outside like the Mexicans do. I also like the flour ones better. Last year in Mexico we hand ground the softened corn and made fresh tortillas. Was really good. If you could afford it the ladies had a power grinder similar to a coffee grinder. Softened corn that had been soaked in water went into the top and out popped dough below into the bowl! Got a picture of those and also DH hand grinding corn to make dough. Jenny, That's really neat.. never saw the grinder you are speaking of.. but while in college I had a girlfriend that was from Mexico and that's how I learned to make the Tortillas.. Yes, I also use a press too makes life easy.. and boy when you make fresh ones ..there is nothing like it.. I just got a recipe in from one of my friends that does a Tamale Pie in the Crock Pot.. I'll post it.. haven't made it though.. so it will be a trial and error..but hey. that's how we all learn..
