Crock Pot Chicken Cacciatore

Ingredients

1 1/2 pound Boneless Skinless Chicken (cut in cubes) I use thighs, and breasts..cut up 1 medium onion(s), sliced and then cut in half 3 medium peppers Red,Green & Yellow cut in strips then in half 26 oz bottled spaghetti sauce ( I use with garlic ) 14 1/2 oz canned diced tomatoes with roasted garlic 1 small can sliced mushrooms.. (stems and pieces)drained 1 Tblsp Parsley 1/4 cup white wine *optional
Instructions

Layer onion and pepper in the bottom of a crockpot. Cut chicken into 1 inch cubes and layer over the peppers and onions. Pour spaghetti sauce and tomatoes and wine over chicken add the mushrooms and sprinkle the Parsley Cover..... Cook on low for 6- 8 hours, OR High for 2 hours and low for 4 or High for 4 hours or till chicken and veggies are done..
Serve with Penne Pasta and Parm cheese

Seasoning again is to your liking... as most store bought sauces have loads of sodium.. I usually use just black pepper.. and no Oregano.. it over powers a dish ..you see I have garlic in the sauce and tomatoes..so no need to over power that also.. but if you have to...be my guest :) God Bless and Enjoy this simple tasty dish..
Usually when I make this the old fashion way.. I prefer to have the bones on the chicken as it brings more flavor and using the whole chicken pieces..and cooking each in stages with good olive oil.. aaaaah !!
