Crockpot Pork Chop Surprise
4-5 medium potatoes, washed, pared and sliced
3-4 carrots, sliced
1 lg or (2 small) onions, diced
5-6 pork chops
1 can cream of mushroom soup
Place vegetables in bottom of crockpot.
Place chops on top of vegetables.
Pour soup over the top. Do not use water.
Cook on low heat 8-10 hours.

Jo, this one sounds good, except for the carrots. I DON'T eat cooked carrots, put one in my mouth, and I'm gonna gag right now! Love 'em raw, though. Still want to try the other one, too. I've made meatloaf in the crockpot before, but they always seem to come out dry. Any suggestions?

Sharon, when I cook meatloaf, I always add a can of diced tomatoes...sometimes Rotels for "spice" sometimes just plain. I don't drain the tomatoes, just leave the juice in.. My meatloaf isn't dry and perhaps this is the reason???
DH likes raw carrots, not cooked...so understand.. Wouldn't hurt this recipe to leave them out.

Do you mix the tomato's in the meat, or pour over the top? I don't usually put any kind of tomato's or tomato sauce in mine, but would be willing to try it.

Sharon, I do meatloaf all the time in my crock pot and mine doesn't go dry..could also be that you are cooking it too long... I use a mixture of beef pork and veal.. and it's tasty and comes out great.. I do believe I posted a recipe for Crock Pot Meatloaf..you might want to check it out..

Sharon,I mix the tomatoes up into the meat mixture, when I am mixing all else and then form into a "meat loaf"...
