Angel Hair with Oil, Garlic and Broccoli
8 ounces angel hair pasta
1/4 cup olive oil
3 large cloves of garlic, minced
Grated Parmesan cheese, optional
Crushed Red Pepper, optional
Cook a package of broccoli flowerets in the microwave. Break them into small pieces.
Cook the angel hair pasta in boiling water - angel hair cooks QUICKLY - don't overcook.
Add the minced garlic to the oil and heat till warm. Do not overheat or the garlic will have a bad taste. Softened and warmed is perfect.
Drain the pasta. Add the pasta and broccoli flowerets to the pan with the warmed oil and garlic. Mix well.
Serve with parmesan cheese and/or crushed red pepper.
Fresh, crusty Italian or French bread is great to dip into the oil/garlic mixture.

Beth, I don't chop the garlic..I slice it so that it kind of melts..and cook it till it's golden.. I use lots of garlic.....and Extra Virgin Olive oil..and it's sooo good.. in fact that's whats for dinner on Friday.. try Broccoli Rabe..it's excellent in dish like this..

If you're really lazy, you can buy the minced garlic in a jar - it's really not bad when in a pinch.
And, Barb, the better the olive oil, the better the whole dish. You are so right.
And if you like shrimp - throw some shrimp in - is very much like scampi - and, oh so simple to make.

I used to make this dish on Christmas eve for the whole family. I would first saute bay scallope in lots of butter and garlic, steam the broccli till bright green, cook angel hair and serve with lots and lots of grated Parmesan. It was wonderful!

Mary, On Christmas Eve we do the Feast of the 7 fish..but during lent I do more the Allio (Oil and Garlic Pasta) and then add what ever veggies I have..
But it's all good and especially that Express Pasta Machine LOL It works good.. No big pots..but folks honestly.. I don't know about a 1lb of Pasta.. haven't done that much..just small portions.. I'll try that when I'm home with the family .. and then it will get the full Barbzeee Report LOL
