Meatloaf Muffins Makes 12 and freezable 1 lb. ground beef, 95% lean 1 package stuffing -- Stove Top 1 medium onion -- chopped 1/2 cup green bell pepper -- chopped fine 1 tsp. garlic powder 2 egg white -- (or 1/4 cup egg beaters) 1 c. hot water 1 pkg onion soup mix 1/4 cup ketchup and 1/4 cup ketchup to coat the tops..
Mix stove top and water in a large bowl, stir with fork until moistened.
In another bowl, combine all remaining ingredients.
Add stuffing to mixture.
Fill sprayed muffin tins almost to the top with mixture.
then spread light coating of ketchup on top of muffins
Bake at 350 for 30-35 minutes.
these are great to do ahead and freeze....and pop in for quick lunches while traveling..
