Crock pot Minestrone
2/3 c. shredded carrots
15 oz can kidney beans, rinsed & drained
½ c. sliced celery
¼ c. diced onion
14.5 oz Italian style stewed tomatoes, undrained
Dash garlic powder
2 (15 oz) fat free chicken broth (or veggie broth)
salt & pepper
6 oz fresh baby spinach
15 oz can navy beans, rinsed & drained
3 oz uncooked spaghetti, broken
Into thirds
Combine carrots, celery, onion, garlic powder, broth, beans, tomatoes, salt and pepper in 4-5 quart crock pot; mix well. Cover and cook on low 6-8 hours. About 20 minutes before serving, add spinach and spaghetti. Increase heat setting to high and cook 15-20 minutes more.
