It might be fun to post your "not for company" meals. The food you cook just for your family. I will be posting in the recipe section a meal I had last week. I call it comfort food. I cannot think of any food I cook that has more than five ingredients. Two of the ingredients will be salt and pepper.

This is not a meal, but I loved my Mother's rice pudding cooked in a double boiler with real long grain rice. It was so creamy and she always put lots of cinnamon. Whenever I make it I think of her.

Mama's "comfort food" was that which she made when any one of us was sick. It was her Potato Soup. It was sort of bland, easy on the stomach and comforting to get something warm and creamy when you were under the weather. I have a friend who's Mama worked and never cooked and she supplied a Vanilla Milkshake when my friend needed comforting. My friend was once sick in bed, "down in her back"... lived ten miles out in the country --- I went out to check on her, taking a Vanilla Milkshake. I thought she was going to cry when she was gifted with her "comfort food"..

Had company did not get to finished, will write here. Cook pot of white beans with plenty of water. Salt and Pepper. When cooked add a can of Whack biscuits, cover and cook five minutes on each side. I will open a can of spinach for my husband to eat with it. I do not season with used grease, ham, etc. only season with salt and pepper. Glass of ice tea and raw onion. Easy.

Guess I've lived in deep south Texas too long. Just a couple of weeks ago I realized that when I'm down in the dumps, nothing cheers me up more than my comfort food - cheese enchiladas!

Whack biscuits!! I had to stop and think about that one...but in the recesses of my mind, I'd filed that away and searched my mind's data bank and came up with refrigerated biscuits in the tube...and you WHACK them on the countertop edge to open them!!! Hahahaha!! Those are good. Haven't had any in a while..I rarely eat biscuits, so have been buying the frozen ones...so I can rarely get a couple outa the bag in the freezer and enjoy....

Been doing some mouth drooling over the thought of some biscuits and sausage gravy for supper some night!!!

Happy Travels!

hmmm I am trying to think of comfort food and can't come up with anything special...although the kids love (get this it's something DH likes as well) salmon patties....and I don't make them for company only because I really don't like to make them only do so cause I know that they all like them!

I guess I always think of comfort food and the winter months....whenever I'm snowbound I start baking bread and make a huge pot of homemade vegetable beef soup.
