Gail,
If you haven't found our recipe board, go find it now - I posted the angel hair recipe over there. Smiling is contagious - try it!

I am vegetarian and can't for the life of me think of any "vegetarian recipes." I just use any old recipe and substitute something veggie for the meat. There are many, many commercial very tasty "fake meats" for vegetarians in almost all largish groceries these days, there's always tofu, eggs if one is not vegan, something called TVP - "textured vegetable protein," which comes dry and has the texture of ground beef - great in chili. I've even gotten my meat-eating husband to prefer some of these products over meat. I think the important thing in vegetarian foods is to be sure there's enough protein eaten each day -- and, of course, green veggies. Potato and corn chips are not part of a good balanced diet of any sort, even if they are "vegetarian."
Also, off the subject a bit, but I thought I might mention something people may not know about many vegetarians, including me: It's not that I don't like the taste of meat; I do (I ate meat until around 1992 when I decided for moral reasons I couldn't do so anymore). Dottie, loving all animals (to the point of nuthood), I could easily agree with your moral decision, and have cut WAY back using meat, but haven't taken the big step yet due to also having a meat loving husb. More and more I find myself ordering meatless entrees at restaurants, like eggplant parmisan, and use half the ground meat in recipes.
Thanks for your thoughts...will use Morningstar Crumbles in my Gorditas tonight. Gail (with Popcorn the dog wrapped around my neck)
