Both my daughters and families are vegetarians, and I use a bit less meat, but need easy recipes they will like when here. Any help out there?

You know, Cheerio...we are not being rude and ignoring you. It's just that we don't cook vegetarian, and know NOTHING about it. I assume true vegetaraians don't use cream of chicken soup, for instance..
If you will put vegetarian recipes in your Goggle Search, you'll come up with pages of them. The perfect selection of them, in my opinion...would be a Vegetarian Recipe Forum. If they are as helpful as THIS one is on Rving...and half as friendly, yuu'll be home free, and have MORE recipes than you could ever use!!

Cheerio, I just put up 2 recipes.. hope that helps some what.. I am looking in my recipes for those that would be veggie type..also you know you can use boca crumbles (soy product) to make chilli, spaghetti sauce .. making tacos with .. lots of ideas and they are very good.. I've used them when I was on a Special program for my heart disease.. Make a Rattitoule ..oops spelling don't look right... or how about eggplant greek dishes are a lot of veggies.. you didn't say if they are Vegan.. will they eat fish ??? Give me some clues ..would be helpful
There are soy cheeses and butters that are very tasty.. and you can use them in like lasagna ..

Like Barbzee said, you can convert lots of recipes - and if they need cream of chicken soup - lots of times cream of mushroom or cream of celery will do the trick. I've made vegetable soup without meat - and I've made spaghetti sauces for years without meat. In my exes Italian family - they always made the meatballs separately anyway - so the sauce had to be good with no meat in it.
It's hard to give you vegetarian recipes for many reasons - some vegetarians eat eggs, others don't. Same with cheese. Same with fish. But there are websites out there that do deal with all of this.
Me, if I had them all coming over - I'd probably make angel hair pasta with a garlic oil sauce with broccoli - yummy. LOL - I just love that!

I can't help much either! I do weight watchers most of the time (not that you can tell it) and I do substitute Black Beans or just about any type of beans for meat in some things but I don't really know a thing about true vegans! I've wanted to try TOFU but my poor "meat and potatoes" DH would DIE if I even suggested it! He won't even eat pinto beans without ham cooked in them and on the side...he was farm raised and it shows! LOL

Thanks much for the good ideas girls! BARBZEE, daughter won't eat anything that can look back at her...beef, fish, chicken, cr. of chick. soup (well you know). WILL eat eggs, cream, yogurt, etc. Also, Barbzee, she won't know what she's missing not trying your crock beef!! It was wonderful. I added more water after cooking, as gravy was thick. YUM!! Will check out the 2 recipes now--thank you.
BETHERS -- How do you make the garlic oil dressing
for the angel hair? Love pasta of any kind. Also love broccoli, although my dogs Cheerio and Popcorn (who sleep with us) hate it when I do. Will say no more.
JOMILT -- Pizza's easy, yea!!!!
RIVERGURL -- Aren't black beans great? I make a yummy thing including chilies and things, that go over rice and it's so good. Thanks for reminding me of that! Love your "3 weenies" sig.

Good you got some ideas from us non-vegetarians, but GOOD cooks! Grin!! I eat a LOT of cooked vegetables, but I just use the microwave to cook them.
I spray them with Butter Flavored Pam, microwave on high till crispy done.. Sometimes, after cooking and while hot, I put shredded cheese atop them and let that melt. Sometimes, I add sour cream with whatever seasonings I have decided to put in that, and stir that into the vegetable, after it's cooked.
I love a head of broccoli,Whoops! Make that cauliflower, microwaved with a mixture of mayo and mustard spread on it before the microwaving!!
A wonderful baked potato is don't peel the tater, slice in rounds. Spread out on a plate..Spray with butter Pam, sprinkle with salt, pepper....or Seasoned Salt....OR salad seasoning and microwave till done. I like this with ketchup on it when I eat it.
I do most of my veggie cooking with NO water and in a bowl or on a plate in the microwave.
I love "Fried Cabbage"... Melt a stick of butter in a skillet.. Put in fine shredded cabbage..sprinkle with salt and pepper, Cook on medium, stirring often till it is done to the crispness you like...I like it crunchier, but DH likes it "mushy"!! Good to cooked with diced big ole onion in there as you cook.
When I was thinking vegetarian earlier...I was thinking MAIN dishes..and I have problems with a MAIN DISH without meat..I'm a big meat eater..
As far as Rivergurl signing off with 3 weenies...she is just BRAGGING cause she has THREE doxies and I only have ONE!!! :)

Jenny, I started back on WW as with having my problems weight finds me...and now that I'm not as active it really finds me.. So I've went back on WW and I do watch my salt intake..It's really the most sensible program.. It was developed out of a New York Hospital plan.. and my girlfriend's Aunt was the one who put it to work.. Most of my recipes that I've put together or gotten are revolved around WW.. So you can enjoy them knowing you are "safe"..LOL
I'm glad you liked my Chuck Roast .. it's one of those no fail recipes..in fact most are... You need to try that Chicken and Stuffing..it's also very tasty..
The Allio..or Oil and Garlic is a classic in Italian cooking.. it's one we do alot of because of Lent..and very simple..just olive oil (extra virgin) and garlic slices ..just simmer the oil..and cook the garlic till golden.. now Beth is adding broccoli which is good but I use Broccoli Rabe.. a bitter type.. but all good.. and make sure your pasta is al dente..
I'm still checking for some other Veggie Recipes.. I was a Vegan for several years because of my Heart disease...and I bought Dean Ornish MD book..he had loads of recipes...as for Tofu... well..to me it was like Silly Puddy...I tried and couldn't do it LOL>.
But I did however use a lot of soy products..which I got from the Health food stores..and they were excellent.. my hubby never knew which was what...kind of like is it real or memorex LOL

I love WW because it is so flexible..problem is I never get the maintanence part down and always have to start over...at least I eat healthy if too much!
Jomilt-you know one cannot have enough DOXIES! LOL Little buggers get to be a handful sometimes. It is pouring rain here today..I mean torrential and they did not want to go out to their pen they stay in all day...even though they have nice dry dog houses..they think this weather is good for laying around the house! ME TOO! Gals just be glad if you arent in the Heartland today...weather is horrible!
